Mango Salsa

Serve this with tortilla chips in place of ordinary salsa. I also like to use it to garnish chicken, pork, or fish. It's a must for any taco bar.

Sweet & Spicy Quick Pickles

This recipe is fantastic if you like a sweet style pickle to go with your meal. The red onions and jalepeños are good for adding color and flavor to things like salads or protein bowls, or even as garnish.

Sweet Chile Glazed Salmon

To understand how you will cook any type of fish you first need to know what fish you are handling. Fat fish will fare better with dry-heat cooking methods like salmon and tuna due to their fat content.

Texas Red Chile

Get a big spoon of "Red" and top it with any of the usual suspects you find with chili. Raw onions, cheddar cheese, tortilla chips, or Fritos® will do fine.

Summer Vegetable Tian

Another beautiful French dish gets my attempt at making it. Garden fresh vegetables are the key to this one. Eggplant, zucchini, and squash will all be in season during the summer.
