Chapter 1 - Garde Manger

This chapter has some of the cold food items you will see in a formal Garde Manger department of a commercial kitchen. Of course, the recipes have changed over time to suit my taste. But you can use them to add some extra color and flavor to your home creations. 

At the end of this chapter I share photos of my experience at culinary school in Arizona!
