Chapter 9 - Vegetables

If I am critiquing someone’s food, what do I try first? The vegetables, every single time. Vegetable cookery has to be my “litmus test” of any good cook. This first bite is the most crucial, tipping the scale and setting the tone for the rest of the food. It also determines a baseline of how developed your palate is. It proves your knowledge of basic seasonings, cooking techniques, and food cost awareness from how many edible portions were trimmed. Cooking vegetables may not seem like a big deal to some, but it may just be your first impression to your new boss during your culinary career. You could even use it to wow your friends and family. Either way, don’t underestimate the power of the veggies!
