Chapter 8 - Vegetarian Entrees

Good help, TV remotes, and fantastic vegetarian recipes are hard to find. I have included some of my "crowd favorites" from when I was a Personal Chef. These recipes can also be made into large sides for bigger gatherings.

For the Summer Vegetable Tian recipe in this book, I like to brush the tops of the vegetables with a light coat of olive oi. It gives you a little bit of crunch after it bakes.  A good chef knows how to provide more than one texture inside of every bite. Contrasting textures with bold flavors make for unique dishes.
