Chapter 2 - Vinaigrettes
There isn’t any cooking involved in my vinaigrettes, so the quality of the ingredients is vital for success. In this chapter, I share vinaigrette recipes from my cooking career that I’ve made so many times that I don’t even use recipes to make them anymore. I don’t rely on ratios or meticulous measurements—I use the Speed Memory Recipe Format™ (SMRF) and listen to the rpm variation of the blender’s motor to determine when I have added just the perfect amount of oil. Eventually, you will too, if you make it enough times.
